Chlorophyll is present in all green-colored vegetables and fruits as chlorophyll a and chlorophyll
b. They are fat-soluble compounds with good antioxidant properties. Foods containing
chlorophyll is best eaten with a minimum amount of fats or oils because when we ingest
chlorophyll moves around our body in micelles, which are molecular groups that contain fat.
Hence small quantities of healthy fats/oils will help their processing after a meal.
Here is a chlorophyll-rich meal Green Rice loaded with all green vegetables and herbs to make your meal
appetizing and delicious.
Ingredients for Green Rice:
- Basmathi Rice 1 cup
- Peas ¼ cup
- Beans ¼ cup
- Spring onion green ¼ cup
- Green capsicum 1.4 cup
- Mint & coriander chutney ¼ cup
- Ghee 4 tbsp
- Cumin/jeera 1 tsp
Preparation Method:
- Take a heavy-bottomed pan.
- Add the ghee and fry the cumin seeds till brown.
- Next, add the spring onion green followed by peas and beans. Sauté on low flame till partially cooked.
- Add the capsicum and sauté till crisp.
- Pour in the chutney and add 2 cups of water. Add the needed salt.
- Bring to a boil on low flame.
- Add the washed rice and cook on low flame till done.
- Serve hot.
